  This is a hard questions because I think everything about neuroscience is cool. First, I will say that the fact that our brains are always changing and responding to our environment is the coolest. Next, I will tell you that the mantis shrimp has 12 different types of photoreceptors in their eyes while humans have two. That means, they see more colors than any other species we know of!
